Description
A delightful jam-filled bread that is great for breakfast or a sweet treat.
Ingredients
Scale
- 1/2 cup warm milk (100–115°F / 38–46°C)
- 1 tsp sugar
- 1 tbsp dry yeast (or 30 g fresh yeast)
- 2 large eggs
- 3/4 cup sugar
- 1/2 cup Greek yogurt
- 50 g unsalted butter (melted)
- 2 tsp vanilla extract
- zest from 1/2 lemon
- 3 to 3 1/2 cups all-purpose flour
- pinch of salt
- 1 egg yolk
- 1 tbsp milk
- 2 tbsp sugar
- 1/2 cup jam (for filling)
Instructions
- In a small bowl, combine warm milk, 1 tsp sugar, and yeast.
- Stir and let sit for 10 minutes, until foamy.
- In a large bowl or stand mixer, beat eggs and sugar for 4–5 minutes until thick and pale.
- Add yogurt and mix until smooth.
- Add the yeast mixture and half of the flour. Mix to combine.
- Add vanilla, lemon zest, and half of the melted butter.
- Switch to a dough hook and begin kneading on low speed.
- Gradually add remaining flour and butter. Knead 4–5 minutes, until dough is soft and slightly sticky.
- Transfer dough to a lightly floured surface and shape into a ball.
- Place in a zip-top bag or covered bowl.
- Refrigerate for at least 2 hours, until doubled.
- Dough can be stored in the fridge overnight or up to 2 days.
- Remove dough from fridge and let sit at room temperature for 30 minutes.
- Divide into 3 equal portions and shape into balls.
- Roll each into a rectangle, spread with jam (optional), and roll into logs.
- Braid the logs and transfer to a prepared loaf pan.
- Cover and let rise for 30–60 minutes, until puffy.
- Preheat oven to 350°F (175°C).
- Mix egg yolk and milk, then brush the top.
- Sprinkle with sugar.
- Bake for 30 minutes, then reduce temperature to 325°F (165°C) and bake another 20–30 minutes.
- If browning too quickly, cover loosely with foil.
- Bake until golden and cooked through. Cool before slicing.
Notes
- This bread can be made in advance and stored in the refrigerator.
- Use any flavor of jam for filling according to your preference.
