Description
A refreshing shredded carrot salad with a zesty dressing.
Ingredients
Scale
- 2–3 carrots, shredded
- 1/4 red onion, sliced super thin
- 1 Protein of choice (Optional! I used cubed grilled chicken)
- 1 tbsp sesame seeds (optional)
- 2 tbsp cilantro, diced (optional)
- 1/2 tsp sesame oil
- 1/2 tbsp soy sauce or coconut aminos
- 1 tsp rice vinegar
- 1/2 lime, juiced
- 1/2–1 tsp maple syrup, honey, or liquid monk fruit drops
- 1/8 tsp ginger powder
- 1 garlic clove, minced
- 1 tsp sriracha or red pepper flakes
Instructions
- In a bowl, combine all of the ingredients for the dressing (alternatively, you could also just add everything to your jar if using one!).
- In a large jar or bowl, add the shredded carrots, onion, and protein of choice.
- Pour the dressing over top, tossing everything super well. Taste & adjust as you’d like (more sweetness, spice, etc.).
- Top with sesame seeds and cilantro. Toss again.
- Let sit in the fridge for 30 minutes to allow the flavors to really come together. Enjoy!
Notes
- You can soak the sliced onion in ice cold water for 10 minutes to make them less strong, if desired.
- Adjust the ingredients based on your taste preferences.
