A delicious and unique twist on classic toast featuring marinated tandoori chicken, creamy mozzarella cheese, and crispy bread.

- 1 pound boneless, skinless chicken thighs
- 1 cup plain yogurt
- 4 large pieces of crusty bread (like French baguette)
- 2 tablespoons tandoori masala
- 4 tablespoons butter
- 1 cup shredded mozzarella cheese
- 2 cloves minced garlic
- 2 tablespoons lemon juice
- 1 teaspoon cayenne pepper
- 1/4 cup chopped cilantro
Instructions
- Marinate the chicken by mixing yogurt, tandoori masala, lemon juice, salt, cayenne pepper, minced garlic, and grated ginger in a bowl. Coat the chicken thoroughly and refrigerate for at least 1 hour or overnight.
- Preheat your grill or stovetop grill pan over medium-high heat. Cook the marinated chicken for 6-7 minutes on each side until cooked through and charred. Let rest before slicing into bite-sized pieces.
- Preheat oven to 400°F (200°C). Mix softened butter with minced garlic and chopped cilantro in a bowl. Spread this mixture on cut sides of the bread.
- Bake the buttered bread cut side up for 5-7 minutes until golden brown.
- Top each piece with sliced tandoori chicken and shredded mozzarella cheese. Bake again for another 5-7 minutes until cheese is melted.
- Serve warm with optional red chili flakes sprinkled on top.
Notes
- For added flavor, consider marinating the chicken overnight.
