Description

A delicious and unique twist on classic toast featuring marinated tandoori chicken, creamy mozzarella cheese, and crispy bread.


Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 1 cup plain yogurt
  • 4 large pieces of crusty bread (like French baguette)
  • 2 tablespoons tandoori masala
  • 4 tablespoons butter
  • 1 cup shredded mozzarella cheese
  • 2 cloves minced garlic
  • 2 tablespoons lemon juice
  • 1 teaspoon cayenne pepper
  • 1/4 cup chopped cilantro

Instructions

  1. Marinate the chicken by mixing yogurt, tandoori masala, lemon juice, salt, cayenne pepper, minced garlic, and grated ginger in a bowl. Coat the chicken thoroughly and refrigerate for at least 1 hour or overnight.
  2. Preheat your grill or stovetop grill pan over medium-high heat. Cook the marinated chicken for 6-7 minutes on each side until cooked through and charred. Let rest before slicing into bite-sized pieces.
  3. Preheat oven to 400°F (200°C). Mix softened butter with minced garlic and chopped cilantro in a bowl. Spread this mixture on cut sides of the bread.
  4. Bake the buttered bread cut side up for 5-7 minutes until golden brown.
  5. Top each piece with sliced tandoori chicken and shredded mozzarella cheese. Bake again for another 5-7 minutes until cheese is melted.
  6. Serve warm with optional red chili flakes sprinkled on top.

  • For added flavor, consider marinating the chicken overnight.
