A delicious and comforting creamy chicken noodle casserole, perfect for a family dinner.

- 2 cups shredded rotisserie chicken
- 8 oz egg noodles
- 1 cup frozen mixed vegetables
- 1 can (10 oz) cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1/2 cup milk
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup crushed Ritz crackers
- 2 tbsp melted butter
Instructions
- Preheat the oven to 350°F and grease a 9×13-inch baking dish.
- Cook the egg noodles according to package directions; drain.
- In a large bowl, mix shredded chicken, vegetables, cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper.
- Fold in the cooked egg noodles and half the cheddar cheese.
- Pour the mixture into the prepared baking dish and top with remaining cheese.
- In a small bowl, combine crushed Ritz crackers with melted butter, then sprinkle over the casserole.
- Bake for 25-30 minutes or until the top is golden brown and bubbly.
- Let cool for a few minutes before serving.
Notes
- This casserole can be prepared ahead of time and stored in the refrigerator before baking.
- Add additional vegetables for extra nutrition, such as spinach or broccoli.
