- 4 oz cream cheese, softened
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- ½ cup raspberry preserves or raspberry jam
- 1 fresh egg
- 1 tablespoon water
- ¼ cup fresh raspberries (optional)
- Powdered sugar for dusting
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Place the thawed puff pastry sheet on a lightly floured surface and gently roll it out to smooth the seams.
- Using a sharp knife or pizza cutter, slice the pastry into small squares, about 2–3 inches each. These will become the base for your Raspberry Cream Cheese Bites.
- In a small bowl, mix the softened cream cheese, sugar, and vanilla extract. Stir until smooth and creamy. The texture should be spreadable but thick.
- Place a small spoonful of cream cheese mixture in the center of each pastry square. Add about a teaspoon of raspberry preserves on top. If you like a more vibrant fruit flavor, add a small fresh raspberry as well.
