Description

This creamy ranch chicken is a deliciously easy crock pot meal that can be served over rice, mashed potatoes, or egg noodles.


Ingredients

  • 2 pounds boneless skinless chicken breasts or thighs
  • 8 ounces cream cheese, softened
  • 1 packet ranch seasoning mix (about 1 ounce)
  • 1 cup chicken broth
  • 2 cloves garlic, minced
  • 1 tablespoon chopped parsley
  • ¼ teaspoon crushed red pepper flakes (optional)

Instructions

  1. Place chicken in the bottom of the crock pot.
  2. In a bowl, whisk together cream cheese, ranch seasoning, minced garlic, and chicken broth until smooth.
  3. Pour the creamy sauce over the chicken, covering it evenly.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  5. Once done, shred the chicken in the pot or leave in large chunks.
  6. Stir to blend the sauce evenly with the meat.
  7. Garnish with parsley and red pepper flakes if desired.
  8. Serve hot over rice, mashed potatoes, or egg noodles.
