- 2 tsp ground ginger

- ½ cup molasses
- ½ cup unsalted butter (softened)
- ½ cup granulated sugar

- Zest of 1 lemon
- 2 cups powdered sugar
- ¼ cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, ground ginger, cinnamon, and a pinch of salt.
- In another bowl, cream softened butter with granulated and brown sugars until light and fluffy.
- Add molasses to the butter mixture; mix well. Gradually add dry ingredients until combined.
- Scoop tablespoon-sized portions onto prepared baking sheets, leaving space between each cookie.
- Bake for 10–12 minutes until edges are firm but centers are still soft. Cool on wire racks before frosting.
- For the Lemon Buttercream, beat together powdered sugar and softened butter until smooth; gradually add heavy cream and lemon zest.
