Description

A delicious and tender prime rib roast that is perfect for special occasions.


Ingredients

Scale
  • 1 (5 lb) Prime Rib Roast
  • 3 tbsp Coarse Sea Salt
  • 6 cloves Fresh Garlic, minced
  • 2 tbsp Fresh Rosemary, chopped
  • 2 tbsp Fresh Thyme, chopped
  • 2 tsp Black Pepper, freshly cracked

Instructions

  1. Pat the prime rib dry with paper towels to remove excess moisture.
  2. Generously rub coarse sea salt all over the roast.
  3. Sprinkle minced garlic, rosemary, thyme, and black pepper on top; massage into the meat.
  4. Wrap tightly in plastic wrap and refrigerate for at least 24 hours (up to 72 hours) to dry brine.
  5. Preheat your oven to 450°F (230°C).
  6. Place the roast on a rack in a roasting pan and cook for 20 minutes.
  7. Lower the oven temperature to 325°F (160°C) and continue cooking until a meat thermometer reads 130°F (54°C) for medium rare.
  8. Rest the roast before slicing and serve with your favorite sauce.
