A delicious and tender prime rib roast that is perfect for special occasions.
Ingredients

- 1 (5 lb) Prime Rib Roast
- 3 tbsp Coarse Sea Salt
- 6 cloves Fresh Garlic, minced
- 2 tbsp Fresh Rosemary, chopped
- 2 tbsp Fresh Thyme, chopped
- 2 tsp Black Pepper, freshly cracked
Instructions
- Pat the prime rib dry with paper towels to remove excess moisture.
- Generously rub coarse sea salt all over the roast.
- Sprinkle minced garlic, rosemary, thyme, and black pepper on top; massage into the meat.
- Wrap tightly in plastic wrap and refrigerate for at least 24 hours (up to 72 hours) to dry brine.
- Preheat your oven to 450°F (230°C).
- Place the roast on a rack in a roasting pan and cook for 20 minutes.
- Lower the oven temperature to 325°F (160°C) and continue cooking until a meat thermometer reads 130°F (54°C) for medium rare.
- Rest the roast before slicing and serve with your favorite sauce.

- Let the meat rest to allow juices to redistribute.
