Ingredients
Scale
- 4 cups kale, chopped
- 1/2 cup grated Parmesan cheese
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/4 cup croutons
- Salt and pepper to taste
Instructions
- In a large bowl, massage the chopped kale with lemon juice and olive oil for 2-3 minutes until tender.
- Add grated Parmesan cheese, cherry tomatoes, red onion, and croutons to the bowl.
- Toss all ingredients together until well combined.
- Season with salt and pepper to taste.
- Serve immediately or chill in the refrigerator for up to 30 minutes before serving.
Notes
- This salad can be prepared ahead of time; just keep the croutons separate until ready to serve.
- For added protein, consider adding grilled chicken or chickpeas.
