Description

A refreshing kale salad with Parmesan cheese, cherry tomatoes, and a tangy lemon dressing.


Ingredients

Scale
  • 4 cups kale, chopped
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup croutons
  • Salt and pepper to taste

Instructions

  1. In a large bowl, massage the chopped kale with lemon juice and olive oil for 2-3 minutes until tender.
  2. Add grated Parmesan cheese, cherry tomatoes, red onion, and croutons to the bowl.
  3. Toss all ingredients together until well combined.
  4. Season with salt and pepper to taste.
  5. Serve immediately or chill in the refrigerator for up to 30 minutes before serving.

Notes
