Delicious quesadillas perfect for Halloween celebrations!
Ingredients

- 4 large flour tortillas
- 1 cup shredded cheese (cheddar, mozzarella, or your choice)
- 1 cup cooked chicken, shredded (optional)
- 1 cup bell peppers, diced (any color)
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper, to taste
- Cooking spray or additional oil for frying
- Black olives (for facial decorations, optional)
Instructions
- In a skillet, heat the olive oil over medium heat. Add the diced bell peppers and a pinch of salt and pepper. Sauté for about 3-5 minutes until they soften.
- If using, add the shredded chicken to the skillet along with cumin and paprika. Stir and cook for another 3-4 minutes until heated through. Remove from heat.
- Take two tortillas and use a sharp knife or cookie cutter to cut out jack o lantern face shapes. You can get creative with different expressions!
- On the whole tortilla, sprinkle shredded cheese generously. Layer the pepper and chicken mixture over the cheese. Top with another layer of cheese on top.
- Place the cut-out tortilla (with the jack o lantern faces) on top of the assembled quesadilla.
- Spray a large skillet with cooking spray or add a little oil. Heat over medium heat. Carefully place the quesadilla in the skillet and cook for about 3-4 minutes until golden brown. Gently flip and cook for an additional 2-3 minutes until the other side is also golden and the cheese is melted.
- If making multiple quesadillas, repeat the cooking process for the remaining tortillas.
- Once cooked, remove from the skillet and allow to cool slightly. Cut into wedges and garnish with black olives for extra facial decoration if desired.
Notes
- Feel free to use any type of cheese you prefer.
- For a vegetarian version, simply omit the chicken.
- Customize the jack o lantern faces to add fun expressions!
