Description

Ingredients

  • 3 cups fresh corn kernels (or frozen)
  • 1 cup whole milk (or almond/oat milk)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 tsp baking powder
  • Honey for drizzling

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a blender, combine half of the corn kernels with milk and sugar; blend until smooth but slightly chunky.
  3. In a large bowl, whisk together the blended mixture, eggs, and melted butter until smooth. Fold in the remaining corn kernels and add baking powder.
  4. Pour the batter into the greased baking dish and spread evenly.
  5. Bake for 45-50 minutes until golden brown and set in the middle. A toothpick should come out clean.
  6. Let cool for 10 minutes before drizzling with honey and serving.
