- 3 cups fresh corn kernels (or frozen)
- 1 cup whole milk (or almond/oat milk)
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 tsp baking powder
- Honey for drizzling
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- In a blender, combine half of the corn kernels with milk and sugar; blend until smooth but slightly chunky.
- In a large bowl, whisk together the blended mixture, eggs, and melted butter until smooth. Fold in the remaining corn kernels and add baking powder.
- Pour the batter into the greased baking dish and spread evenly.
- Bake for 45-50 minutes until golden brown and set in the middle. A toothpick should come out clean.
- Let cool for 10 minutes before drizzling with honey and serving.
