Description

Delicious roasted Yukon Gold potatoes seasoned with herbs and Parmesan cheese.


Ingredients

  • 2 lbs Yukon Gold Potatoes, peeled and diced
  • 3 tbsp olive oil
  • 1 cup grated Parmesan cheese
  • 2 tsp fresh rosemary, chopped
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Boil diced potatoes in a large pot for about 10 minutes; drain well.
  3. Toss parboiled potatoes in a large bowl with olive oil, garlic powder, salt, and pepper until evenly coated.
  4. Sprinkle grated Parmesan cheese over the seasoned potatoes and toss again.
  5. Spread the potato mixture on a parchment-lined baking sheet.
  6. Roast for 30-35 minutes until golden brown and crispy, flipping halfway through cooking.
  7. Let cool slightly before serving.
