- 3 cups all-purpose flour
- 3/4 cup packed brown sugar
- 1/2 cup unsalted butter, softened
- 1/4 cup molasses
- 1/4 cup honey
- 1 large egg
- 1 tsp baking soda
- 1 tbsp ground ginger
- 1 tbsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 2 cups confectioners’ sugar
- 2–3 tbsp milk
- 1/2 tsp vanilla extract
- to taste Green and red food coloring
Instructions
- In a large bowl, combine flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt. Mix well.
- In another bowl, cream together the softened butter and brown sugar until light and fluffy. Add the egg, molasses, and honey, then beat until well combined.
- Gradually add the dry mixture to the wet mixture. Mix on low speed until a stiff dough forms.
- Divide the dough into two portions, wrap in plastic wrap, and refrigerate for at least 2 hours.
- Preheat the oven to 350°F (175°C). Roll out the dough on a floured surface to about 1/4 inch thickness. Use cookie cutters to cut shapes of your choice.
- Place cookies on a lined baking sheet and bake for 8-10 minutes or until edges are firm. Let cool on a wire rack.
- In a bowl, whisk together confectioners’ sugar, milk, and vanilla extract until smooth. Divide into portions and color as desired.
- Use a piping bag to decorate cookies with festive designs, such as holly leaves and berries.
Notes
- Ensure the cookies are completely cooled before icing to prevent the icing from melting.
- For a chewier texture, slightly under-bake the cookies and allow them to set on the baking sheet.
- Store in an airtight container to keep the cookies fresh for up to a week.
