Description

Ingredients

  • 3/4 cup packed brown sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup molasses
  • 1/4 cup honey
  • 1 large egg
  • 1 tsp baking soda

  • 1 tbsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 2 cups confectioners’ sugar
  • 23 tbsp milk
  • 1/2 tsp vanilla extract
  • to taste Green and red food coloring

Instructions

  1. In a large bowl, combine flour, ginger, cinnamon, cloves, nutmeg, baking soda, and salt. Mix well.
  2. In another bowl, cream together the softened butter and brown sugar until light and fluffy. Add the egg, molasses, and honey, then beat until well combined.
  3. Gradually add the dry mixture to the wet mixture. Mix on low speed until a stiff dough forms.
  4. Divide the dough into two portions, wrap in plastic wrap, and refrigerate for at least 2 hours.
  5. Preheat the oven to 350°F (175°C). Roll out the dough on a floured surface to about 1/4 inch thickness. Use cookie cutters to cut shapes of your choice.
  6. Place cookies on a lined baking sheet and bake for 8-10 minutes or until edges are firm. Let cool on a wire rack.
  7. In a bowl, whisk together confectioners’ sugar, milk, and vanilla extract until smooth. Divide into portions and color as desired.
  8. Use a piping bag to decorate cookies with festive designs, such as holly leaves and berries.
