- 2 tbsp extra virgin olive oil
- 1 cup cherry tomatoes (halved)
- 200g fresh mozzarella (torn into pieces)
- 1 cup mixed olives (sliced or whole)
- ¼ cup fresh basil (chopped)
- 2 tbsp fresh rosemary (chopped)
- 2 tbsp balsamic glaze
Instructions
- Preheat your oven to 400°F (200°C). Warm store-bought focaccia if using.
- Prepare toppings by halving cherry tomatoes, tearing mozzarella, and chopping herbs.
- Place warmed focaccia on a serving board and drizzle with olive oil.
- Artfully arrange cherry tomatoes, mozzarella, olives, and herbs on top.
- Drizzle with balsamic glaze before serving.
