Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 cup cherry tomatoes (halved)
  • 200g fresh mozzarella (torn into pieces)
  • 1 cup mixed olives (sliced or whole)
  • ¼ cup fresh basil (chopped)
  • 2 tbsp fresh rosemary (chopped)
  • 2 tbsp balsamic glaze

Instructions

  1. Preheat your oven to 400°F (200°C). Warm store-bought focaccia if using.
  2. Prepare toppings by halving cherry tomatoes, tearing mozzarella, and chopping herbs.
  3. Place warmed focaccia on a serving board and drizzle with olive oil.
  4. Artfully arrange cherry tomatoes, mozzarella, olives, and herbs on top.
  5. Drizzle with balsamic glaze before serving.
