A delicious vegetable ramen made with a rich broth and fresh vegetables.
Ingredients

- 4 cups vegetable broth
- 2 cups ramen noodles
- 1/2 cup coconut milk
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon sesame seeds
- 1 cup sliced carrots
- 1 cup sliced bell peppers
- 1 cup sliced mushrooms
- 1/2 cup chopped green onions
- 1 tablespoon minced garlic
- 1 teaspoon grated ginger
Instructions
- In a large pot, bring the vegetable broth to a boil over medium-high heat.
- Add the ramen noodles and cook according to package instructions until tender, about 4-5 minutes.
- Stir in the coconut milk, soy sauce, sesame oil, sesame seeds, carrots, bell peppers, mushrooms, garlic, and ginger.
- Reduce heat to low and simmer for 10 minutes, stirring occasionally, until vegetables are tender.
- Serve hot, garnished with green onions.
Notes
- This dish can be customized with other vegetables as per your preference.
- For extra protein, consider adding tofu or edamame.
