Description

A delicious vegetable ramen made with a rich broth and fresh vegetables.


Ingredients

  • 4 cups vegetable broth
  • 2 cups ramen noodles
  • 1/2 cup coconut milk
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon sesame seeds
  • 1 cup sliced carrots
  • 1 cup sliced bell peppers
  • 1 cup sliced mushrooms
  • 1/2 cup chopped green onions
  • 1 tablespoon minced garlic
  • 1 teaspoon grated ginger

Instructions

  1. In a large pot, bring the vegetable broth to a boil over medium-high heat.
  2. Add the ramen noodles and cook according to package instructions until tender, about 4-5 minutes.
  3. Stir in the coconut milk, soy sauce, sesame oil, sesame seeds, carrots, bell peppers, mushrooms, garlic, and ginger.
  4. Reduce heat to low and simmer for 10 minutes, stirring occasionally, until vegetables are tender.
  5. Serve hot, garnished with green onions.
