Description

A refreshing salad made with crisp cucumbers and radishes, dressed with a light vinaigrette.


Ingredients

Scale
  • 2 cups cucumbers
  • 2 cups radishes
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tsp salt
  • 2 tbsp dill (fresh)
  • 2 tbsp green onions
  • 1/4 tsp sweetener (Erythritol for Keto, honey or agave nectar)

Instructions

  1. Wash and scrub radishes. Wash cucumbers and slice both into thin slices.
  2. Place sliced vegetables in a bowl.
  3. In a small bowl, combine all ingredients for the dressing.
  4. Pour dressing over the vegetables and stir to coat.
  5. Top with dill and green onion.
  6. Serve or refrigerate for up to one day.

  • This salad is best served fresh but can be stored in the refrigerator for a day.
