Ingredients

  • 1 package (9 ounces) refrigerated cheese tortellini
  • 2 cups fresh spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. In a large pot, bring salted water to a boil. Add tortellini and cook according to package instructions until al dente. Drain and set aside.
  2. In the same pot, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the chopped spinach and halved cherry tomatoes. Cook for about 3-4 minutes until spinach wilts and tomatoes begin to soften.
  4. Reduce the heat to low, and pour in the heavy cream. Stir well to combine.
  5. Mix in the grated Parmesan cheese until melted and smooth. Season with Italian seasoning, salt, and pepper to taste.
  6. Add the cooked tortellini to the creamy sauce and toss gently until well coated.
  7. Warm everything over low heat for about 2-3 minutes until heated through.
  8. Remove from heat and garnish with fresh basil leaves if desired. Serve immediately while hot.
