Description

A delicious Cajun rice skillet with sausage and fresh vegetables.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 cup diced red bell pepper
  • 1 cup diced yellow or green bell pepper
  • 1 cup diced celery
  • 1 cup diced white or yellow onion
  • 12 ounces andouille sausage or kielbasa (sliced)
  • 4 cloves garlic (minced)
  • 3 tablespoons tomato paste
  • 1 ¾ cups low-sodium chicken broth
  • 1 ¼ cups instant white rice
  • to taste Cajun seasoning
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Heat a large skillet over medium heat.
  2. Once the skillet is hot, add the oil and then the bell peppers, celery, and onion. Sauté for 4-5 minutes, or until softened.
  3. Stir in the sausage and cook until browned on both sides, about 5 minutes.
  4. Add the garlic and cook for 30 seconds.
  5. Stir in the tomato paste, and cook, stirring the entire time, for 1 minute.
  6. Stir in the chicken broth and bring to a simmer. Stir in the rice.
  7. Cover, and cook for 5 minutes, stirring occasionally.
  8. Remove from heat.
  9. Stir in the Cajun seasoning to taste.
  10. Sprinkle with chopped parsley.

Notes

  • Feel free to substitute the sausage for a vegetarian option if desired.
  • Adjust seasoning based on personal preference.
