Description
A delicious Cajun rice skillet with sausage and fresh vegetables.
Ingredients

- 1 tablespoon olive oil
- 1 cup diced red bell pepper
- 1 cup diced yellow or green bell pepper
- 1 cup diced celery
- 1 cup diced white or yellow onion
- 12 ounces andouille sausage or kielbasa (sliced)
- 4 cloves garlic (minced)
- 3 tablespoons tomato paste
- 1 ¾ cups low-sodium chicken broth
- 1 ¼ cups instant white rice
- to taste Cajun seasoning
- 1 tablespoon chopped fresh parsley
Instructions
- Heat a large skillet over medium heat.
- Once the skillet is hot, add the oil and then the bell peppers, celery, and onion. Sauté for 4-5 minutes, or until softened.
- Stir in the sausage and cook until browned on both sides, about 5 minutes.
- Add the garlic and cook for 30 seconds.
- Stir in the tomato paste, and cook, stirring the entire time, for 1 minute.
- Stir in the chicken broth and bring to a simmer. Stir in the rice.
- Cover, and cook for 5 minutes, stirring occasionally.
- Remove from heat.
- Stir in the Cajun seasoning to taste.
- Sprinkle with chopped parsley.
Notes
- Feel free to substitute the sausage for a vegetarian option if desired.
- Adjust seasoning based on personal preference.
