Description

Instructions

  2. Add Vanilla and Dry Ingredients: Mix in the vanilla extract. In a separate bowl, whisk together the flour and salt. Gradually add the flour mixture to the butter mixture, stirring until a soft dough forms.
  3. Fold in the Pecans: Add the finely chopped pecans and mix until evenly distributed. The finer the chop, the smoother your cookie texture will be. You can use a food processor if you like.
  4. Chill the Dough: Cover the bowl with plastic wrap and chill the dough for at least 30 minutes. This helps the cookies hold their shape during baking.
  5. Shape and Bake: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Scoop and roll the dough into 1-inch balls and place them about 1 inch apart. Bake for 12–14 minutes, or until the bottoms are lightly golden. The tops should not brown.
  6. Double Roll in Sugar: Let the cookies cool for about 5 minutes, then roll them in powdered sugar while still warm. Let them cool completely, then roll a second time for that perfect snowy finish.
