Delicious mini fritters filled with diced apples and coated in a sweet glaze, perfect for a warm treat!

- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 2 large eggs
- 1/3 cup milk
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 cups finely diced apples (about 2 medium apples)
- 1 cup powdered sugar
- 2–3 tablespoons milk (for the glaze)
- 1/2 teaspoon vanilla extract (for the glaze)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin or line it with mini paper liners. I always prefer a light coating of butter for extra flavor and slightly crisp edges.
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt. The cinnamon and nutmeg are what give these bites their signature warm, bakery-style aroma.
- In another bowl, whisk the eggs, milk, melted butter, and vanilla extract until smooth. Make sure the butter is not too hot when adding it, or it may cook the eggs slightly.
- Pour the wet mixture into the dry ingredients. Stir gently until just combined. Do not overmix. The batter should be thick but soft. Fold in the diced apples carefully so they are evenly distributed.
- Spoon the batter into the mini muffin tin, filling each cavity about 3/4 full. Bake for 12–15 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
- While the fritter bites cool slightly, whisk together the powdered sugar, milk, and vanilla until smooth. The glaze should be thick but pourable.
- Dip the tops of the warm fritters into the glaze or drizzle it over each one. Let them rest for about 10 minutes so the glaze sets into a delicate, slightly crackled coating. Serve warm for the ultimate experience.

- The smell at this stage is incredible—sweet apples mingling with cinnamon and warm batter.
- For a more intense apple flavor, use a mix of tart and sweet apples.
