Description

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups low-sodium vegetable broth
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Rinse the quinoa thoroughly under cold water using a fine mesh sieve.
  2. In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil over medium-high heat.
  3. Reduce heat to low, cover, and simmer for 12-15 minutes, or until quinoa is tender and liquid is absorbed.
  4. Meanwhile, in a small skillet over medium heat, melt the butter. Add the minced garlic and cook, stirring, until fragrant but not browned, about 1 minute.
  5. Fluff the cooked quinoa with a fork. Stir in the garlic butter, salt, and black pepper until well combined.
  6. Garnish with chopped parsley if desired. Serve warm.
