Description

Deliciously sweet and festive white chocolate peppermint cookies perfect for the holidays!

Ingredients

Scale
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 12 ounces white chocolate chips or melting wafers
  • 1/2 cup crushed peppermint candies or candy canes

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
  3. Cream Butter and Sugars: In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add Eggs and Vanilla: Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Combine with Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Shape Cookies: Roll the dough into balls about 1.5 inches in diameter and place them on prepared baking sheets, leaving about 2 inches between each cookie.
  7. Bake: Bake in the preheated oven for 10-12 minutes or until edges are set. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  8. Melt White Chocolate: In a microwave-safe bowl, melt the white chocolate chips in 30-second increments, stirring after each, until smooth.
  9. Dip and Decorate: Dip half of each cooled cookie into the melted white chocolate, then immediately sprinkle with crushed peppermint candies. Place on parchment paper to set.

Notes

  • Ensure butter is fully softened to avoid overly dense cookies.
  • Use parchment paper to prevent sticking and for easy cleanup.
  • If white chocolate thickens, add a teaspoon of vegetable oil and stir.
  • Store cookies in an airtight container to keep them fresh and crisp.
