Deliciously sweet and festive white chocolate peppermint cookies perfect for the holidays!
Ingredients
Scale
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 12 ounces white chocolate chips or melting wafers
- 1/2 cup crushed peppermint candies or candy canes
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Mix Dry Ingredients: In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
- Cream Butter and Sugars: In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add Eggs and Vanilla: Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Combine with Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Shape Cookies: Roll the dough into balls about 1.5 inches in diameter and place them on prepared baking sheets, leaving about 2 inches between each cookie.
- Bake: Bake in the preheated oven for 10-12 minutes or until edges are set. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Melt White Chocolate: In a microwave-safe bowl, melt the white chocolate chips in 30-second increments, stirring after each, until smooth.
- Dip and Decorate: Dip half of each cooled cookie into the melted white chocolate, then immediately sprinkle with crushed peppermint candies. Place on parchment paper to set.
Notes
- Ensure butter is fully softened to avoid overly dense cookies.
- Use parchment paper to prevent sticking and for easy cleanup.
- If white chocolate thickens, add a teaspoon of vegetable oil and stir.
- Store cookies in an airtight container to keep them fresh and crisp.
