Instructions

  1. Prepare the Dough: In a large bowl, mix the flour, sugar, yeast, and salt. In a separate bowl, combine the warm milk, melted butter, egg, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place the dough back in the bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours or until doubled in size.
  2. Prepare the Filling: Dice the peeled peaches and set aside.
  3. Shape the Donuts: Once the dough has risen, roll it out on a floured surface to about 1/2 inch thickness. Cut out circles using a donut cutter or a glass. Add a spoonful of diced peaches to the center of half the circles. Place another dough circle on top and press the edges to seal.
  4. Fry the Donuts: Heat oil in a deep fryer or large pot to 350°F (175°C). Carefully fry the donuts in batches until golden brown on both sides, about 2-3 minutes per side. Remove from the oil and drain on paper towels.
  5. Coat the Donuts: Mix the 1/4 cup sugar with the cinnamon in a shallow bowl. While the donuts are still warm, roll them in the cinnamon-sugar mixture until coated.
