Description

Delicious mini heart-shaped cakes perfect for Valentine’s Day celebrations.


Ingredients

  • 1 ⅔ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • ½ cup unsalted butter (softened)
  • ½ cup shortening
  • 23 cups powdered sugar
  • 1 teaspoon vanilla extract
  • dash salt
  • 3 tablespoons milk
  • food coloring
  • Valentine’s sprinkles

Instructions

  1. Preheat the oven to 375°F. Coat 6 mini heart cake pans with cooking spray and set aside.
  2. In a medium bowl, whisk together the flour and baking powder.
  3. In a large mixing bowl, cream the butter and sugar until smooth.
  4. Add the eggs and vanilla extract and mix until fully combined.
  5. Add the flour mixture and milk alternately, starting and ending with the flour mixture. Mix just until combined.
  6. Divide the batter evenly between the prepared pans, filling each about ⅔ full.
  7. Bake for 20 minutes, or until the tops are lightly golden and a toothpick inserted in the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then remove and cool completely before frosting.
  9. Beat the butter and shortening together until smooth.
  10. Gradually add the powdered sugar, mixing on medium speed.
  11. Add the vanilla extract and salt.
  12. Add the milk one tablespoon at a time until the frosting reaches a smooth, spreadable consistency.
  13. If desired, mix in food coloring.
  14. Frost the tops of the cakes with a knife or spatula.
  15. Pipe decorations, add sprinkles, or write messages on the cakes.
  16. Serve and enjoy.

Notes

  • Feel free to adjust the amount of food coloring to achieve your desired shade.
  • These cakes can be made in advance and frosted just before serving.
