- 2 cups all-purpose flour
- 1 cup sweetened shredded coconut
- ½ cup granulated sugar
- 1 cup coconut milk
- 1 large egg
- 3 teaspoons baking powder
- ½ teaspoon salt
- ½ teaspoon vanilla extract
- ½ teaspoon ground nutmeg
- ½ teaspoon ground cinnamon
- ¼ cup unsalted butter, melted
Instructions
- Prepare a loaf pan by greasing it or lining it with parchment paper.
- In a large mixing bowl, combine the flour, baking powder, salt, ground nutmeg, ground cinnamon, and sugar. Stir until well mixed.
- Add the shredded coconut to the dry ingredients, mixing until evenly distributed.
- In another bowl, whisk together the coconut milk, egg, melted butter, and vanilla extract until fully combined.
- Pour the wet mixture into the dry ingredients, mixing gently to combine without overmixing. The batter should be slightly lumpy.
- Transfer the batter into your prepared loaf pan, smoothing the top with a spatula.
- Place in the preheated oven and bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
- Remove the bread from the oven and allow it to cool in the pan for about 15-20 minutes. Then transfer it to a wire rack to cool completely.
- Once cooled, slice the bread into pieces and serve or store in an airtight container.
Notes
- This bread can be stored in an airtight container at room temperature for up to 3 days.
- For added flavor, you can sprinkle some extra shredded coconut on top before baking.
