Ingredients

  • ¼ cup unsalted butter, melted

Instructions

  1. Prepare a loaf pan by greasing it or lining it with parchment paper.
  2. In a large mixing bowl, combine the flour, baking powder, salt, ground nutmeg, ground cinnamon, and sugar. Stir until well mixed.
  3. Add the shredded coconut to the dry ingredients, mixing until evenly distributed.
  4. In another bowl, whisk together the coconut milk, egg, melted butter, and vanilla extract until fully combined.
  5. Pour the wet mixture into the dry ingredients, mixing gently to combine without overmixing. The batter should be slightly lumpy.
