A quick and healthy stir-fry featuring tofu and fresh vegetables.
Ingredients

- 1 block firm tofu, drained and cubed
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, sliced
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 2 green onions, chopped
- to taste Sesame seeds for garnish
Instructions
- Press the tofu to remove excess moisture.
- Heat olive oil in a pan over medium heat.
- Add tofu cubes and cook until golden brown.
- Add garlic and ginger, sauté for 1 minute.
- Add bell pepper, broccoli, and carrot; stir fry for 5-7 minutes.
- Pour in soy sauce and mix well.
- Garnish with green onions and sesame seeds.
- Serve hot.
