Description
This banana bread is moist and delicious with hints of sweetness from the sugars and the bananas.
Ingredients

- 3 overripe medium bananas, mashed (about 1 cup)
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 1/4 cup packed light brown sugar
- 2 large eggs, at room temperature
- 1/2 cup greek yogurt (or sour cream!)
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1 teaspoon salt
Instructions
- Preheat the oven to 350ºF. Grease a 9 x 5-inch loaf pan on all sides and set aside.
- In a large bowl, combine the mashed bananas with the melted butter, stirring to combine.
- Add the granulated sugar and brown sugar and mix to combine.
- Add the eggs, greek yogurt, and vanilla extract and whisk until fully combined.
- Add the flour, baking soda, and salt to the bowl and use a rubber spatula to fold to combine until no streaks of flour remain. It’s okay if it’s a little lumpy. Do not over mix!
- Scrape the batter into your prepared pan, spreading it into an even layer.
- Bake for 45 to 50 minutes, or until a knife inserted in the center comes out mostly clean.
- Allow to cool for 15 minutes before removing from loaf pan and serving.
Notes
- For best results, use overripe bananas as they add natural sweetness and moisture.
- This bread can be stored at room temperature for a few days or in the refrigerator for longer freshness.
