Description
Delicious homemade cream puffs filled with strawberry cream, perfect for any occasion.
Ingredients
Scale
- 1/2 cup water
- 1/2 cup milk
- 1/2 cup unsalted butter
- 1/4 tsp salt
- 1 tsp sugar
- 1 cup all-purpose flour
- 4 large eggs
- 1 cup heavy whipping cream, cold
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
- 1 cup chopped fresh strawberries
- Powdered sugar for dusting
- Extra sliced strawberries
Instructions
- In a medium saucepan over medium heat, combine the water, milk, butter, salt, and sugar. Stir until the butter is fully melted and the mixture just begins to boil. Remove from heat and immediately add the flour all at once. Stir vigorously with a wooden spoon until the mixture pulls away from the sides of the pan and forms a smooth ball.
- Return the pan to the stove over low heat and cook the dough for another minute or two, stirring constantly, to dry it out slightly. Remove from heat and let it cool for 5 minutes.
- Once cooled slightly, add the eggs one at a time, beating well after each addition. The dough should become glossy and smooth, with a pipeable consistency.
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Transfer the choux dough into a piping bag fitted with a large round tip (or use a spoon). Pipe or spoon small mounds (about 1 inches wide) onto the baking sheet, spacing them a few inches apart.
- Lightly dampen your finger and press down any pointed peaks on the dough to prevent burning. Bake for 20–25 minutes or until golden brown and puffed. Avoid opening the oven early, or the puffs may deflate.
- Once done, remove from the oven and cool completely on a wire rack.
- In a chilled mixing bowl, whip the cold cream until soft peaks form. Add powdered sugar and vanilla extract, and whip until stiff peaks form. Gently fold in the chopped strawberries.
- Once the puffs are completely cooled, use a serrated knife to slice them in half horizontally. Spoon or pipe the strawberry cream into the bottom half, then place the top half back on. Dust with powdered sugar and garnish with extra strawberries if desired.
Notes
- Make sure to cool the choux pastry completely before filling to prevent the cream from melting.
- These can be made ahead of time and assembled just before serving for best texture.
