Description

A deliciously spicy twist on traditional meatloaf with jalapeños and cheddar cheese.


Ingredients

  • 1 cup shredded cheddar cheese
  • 2 eggs
  • 1 cup breadcrumbs
  • 1 cup milk
  • 1 medium onion, finely chopped
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika
  • 1/2 cup pickled jalapeños, sliced
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 1/2 cup of your favorite hot sauce
  • 1/2 cup mayonnaise (for topping)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Mix Ingredients: In a large bowl, combine ground beef, shredded cheddar cheese, eggs, breadcrumbs, milk, chopped onion, garlic powder, paprika, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  3. Shape the Meatloaf: Transfer the meat mixture into a loaf pan (or shape it by hand) and press it down evenly.
  4. Add Jalapeños: Press the sliced jalapeños into the top of the meatloaf.
  5. Bake: Place the loaf pan in the preheated oven and bake for about 45-50 minutes, or until the meatloaf is fully cooked through.
  6. Prepare Sauce: While the meatloaf is baking, mix the hot sauce and mayonnaise in a small bowl.
  7. Remove and Rest: Once cooked, remove the meatloaf from the oven and allow it to rest for about 10 minutes.
  8. Top with Sauce: Drizzle the hot sauce and mayonnaise mixture over the meatloaf.
  9. Garnish: Sprinkle freshly chopped parsley on top before serving.

Notes

  • For a smoky flavor, try adding a tablespoon of liquid smoke to the meat mixture.
  • Use a meat thermometer to ensure the internal temperature of the meatloaf reaches 160°F (71°C) for safety.
  • Serve with a side of mashed potatoes or a fresh salad to balance the spice.
