Description

A delicious Cajun shrimp and rice dish, perfect for a quick weeknight meal.


Ingredients

  • 1 pound shrimp, deveined and peeled
  • 2 cups long-grain rice
  • 1 large onion, diced
  • 1 bell pepper, diced (red or green)
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 tablespoons vegetable oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 1/4 cup green onions, chopped (for garnish)

Instructions

  1. In a large skillet or dutch oven, heat the vegetable oil over medium heat.
  2. Add the diced onion, bell pepper, and celery. Sauté for about 5 minutes or until softened. Stir in the minced garlic and cook for an additional minute.
  3. Stir in the long-grain rice, allowing it to toast slightly and absorb some flavor for about 2 minutes.
  4. Pour in the chicken broth and stir well. Next, add the Cajun seasoning, paprika, and cayenne pepper. Mix to combine, and season with salt and pepper to taste.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 15 minutes or until the rice is cooked and has absorbed most of the liquid.
  6. Once the rice is tender, add the deveined shrimp to the skillet. Cover again and cook for 5 minutes until the shrimp are opaque and cooked through.
  7. Remove the skillet from heat. Fluff the rice gently with a fork, and garnish with chopped green onions before serving.

  • This recipe can be adjusted by adding more vegetables like peas or corn.
