- 1 pound shrimp, deveined and peeled
- 2 cups long-grain rice
- 1 large onion, diced
- 1 bell pepper, diced (red or green)
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 tablespoons vegetable oil
- 1 tablespoon Cajun seasoning
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 1/4 cup green onions, chopped (for garnish)
Instructions
- In a large skillet or dutch oven, heat the vegetable oil over medium heat.
- Add the diced onion, bell pepper, and celery. Sauté for about 5 minutes or until softened. Stir in the minced garlic and cook for an additional minute.
- Stir in the long-grain rice, allowing it to toast slightly and absorb some flavor for about 2 minutes.
- Pour in the chicken broth and stir well. Next, add the Cajun seasoning, paprika, and cayenne pepper. Mix to combine, and season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 15 minutes or until the rice is cooked and has absorbed most of the liquid.
- Once the rice is tender, add the deveined shrimp to the skillet. Cover again and cook for 5 minutes until the shrimp are opaque and cooked through.
- Remove the skillet from heat. Fluff the rice gently with a fork, and garnish with chopped green onions before serving.
Notes
- This recipe can be adjusted by adding more vegetables like peas or corn.
- For a spicier flavor, increase the amount of cayenne pepper.
