Description

Ingredients

  • 1 cup frozen peas
  • 1 cup diced carrots
  • 1/2 cup diced celery

  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • Salt to taste
  • Pepper to taste
  • 1 package of puff pastry
  • 1 egg, beaten (for egg wash)
  • Fresh thyme (optional, for garnish)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Vegetables: In a large pot, melt the butter over medium heat. Add the onion, garlic, celery, and carrots. Cook until the vegetables are slightly softened, about 5 minutes.
  3. Make the Sauce: Stir in the flour, stirring constantly until it forms a paste and starts to bubble. Gradually whisk in the chicken broth and milk, continuing to whisk until the mixture is smooth and thickened.
  4. Add Chicken and Peas: Mix in the shredded chicken and frozen peas. Season with salt and pepper to taste.
  5. Assemble Pies: Roll out the puff pastry and cut into circles slightly larger than your baking dishes. Pour the chicken mixture into individual baking dishes and cover with the puff pastry.
  6. Seal and Vent: Press the edges of the pastry to seal the dishes. Cut small slits in the top of each pie to allow steam to escape.
  7. Egg Wash: Brush the tops with beaten egg for a golden finish.
  8. Bake: Place the pies on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and puffed.
  9. Garnish and Serve: Optionally, sprinkle with fresh thyme before serving.
