- 2 cups cooked, shredded chicken
- 1 cup frozen peas
- 1 cup diced carrots
- 1/2 cup diced celery
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 1 3/4 cups chicken broth
- 2/3 cup milk

- Pepper to taste
- 1 package of puff pastry
- 1 egg, beaten (for egg wash)
- Fresh thyme (optional, for garnish)
- 1 onion, finely chopped
- 2 cloves garlic, minced
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare Vegetables: In a large pot, melt the butter over medium heat. Add the onion, garlic, celery, and carrots. Cook until the vegetables are slightly softened, about 5 minutes.
- Make the Sauce: Stir in the flour, stirring constantly until it forms a paste and starts to bubble. Gradually whisk in the chicken broth and milk, continuing to whisk until the mixture is smooth and thickened.
- Add Chicken and Peas: Mix in the shredded chicken and frozen peas. Season with salt and pepper to taste.
- Assemble Pies: Roll out the puff pastry and cut into circles slightly larger than your baking dishes. Pour the chicken mixture into individual baking dishes and cover with the puff pastry.
- Seal and Vent: Press the edges of the pastry to seal the dishes. Cut small slits in the top of each pie to allow steam to escape.
- Egg Wash: Brush the tops with beaten egg for a golden finish.
- Bake: Place the pies on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and puffed.
- Garnish and Serve: Optionally, sprinkle with fresh thyme before serving.

- If you’re short on time, use store-bought rotisserie chicken.
- For extra flavor, add herbs like rosemary or thyme to the filling.
