Description
A deliciously moist banana cake topped with cream cheese frosting and a salted caramel drizzle.

- 1/2 cup Salted Butter
- 3/4 cup Brown Sugar
- 1/2 cup Granulated Sugar
- 2 Eggs (at room temperature)
- 1 cup Greek Yogurt (at room temperature)
- 3 ripe Bananas (mashed, about 1 1/2 cups)
- 1 tsp Vanilla Extract
- 2 cups All-Purpose Flour
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 tsp Cinnamon
- 4 oz Cream Cheese (at room temperature)
- 3 tbsp Butter (at room temperature)
- 2 cups Powdered Sugar
- 3 tbsp Coconut Oil (melted)
- 1/4 cup Almond Butter (smooth and creamy)
- 1/4 cup + 3 tbsp Maple Syrup
- Pinch of Salt
Instructions
- Preheat the oven to 350°F and grease an 8×8” square baking pan lined with parchment paper.
- Brown the salted butter in a saucepan over medium-high heat for 5-8 minutes, then set aside.
- In a medium bowl, combine flour, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, whisk together the brown butter and sugars.
- Add eggs, Greek yogurt, mashed bananas, and vanilla extract and mix well.
- Fold in the dry ingredients gently until just combined.
- Pour the batter into the prepared pan and bake for 45-55 minutes until golden and a toothpick comes out clean.
- Let the cake cool completely before frosting.
- Beat cream cheese and butter together, then add vanilla extract and powdered sugar until smooth.
- Make the salted caramel by mixing coconut oil, almond butter, maple syrup, and a pinch of salt until smooth.
- Spread the frosting over the cooled cake, then drizzle and swirl the caramel on top. Finish with flaky sea salt.
- Cut into 16 slices and enjoy!
Notes
- Ensure all ingredients, especially eggs and yogurt, are at room temperature for best results.
- For a richer flavor, allow the cake to rest for a day before serving.
