Description

Deliciously spiced muffins perfect for breakfast or a snack.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup dark brown sugar
  • 1/2 cup unsulphured dark molasses
  • 2 large eggs
  • 3/4 cup buttermilk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners or grease it lightly.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, cloves, and nutmeg.
  3. In a large bowl, whisk together brown sugar, molasses, eggs, buttermilk, melted butter, and vanilla extract until smooth.
  4. Add the dry ingredients into the wet ingredients and stir gently until just combined—do not overmix.
  5. Divide the batter evenly into the muffin cups, filling each about 3/4 full.
  6. Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack.
