Instructions

  1. Activate Yeast: In a small bowl, combine warm milk and yeast. Let it sit for about 5 minutes until frothy.
  2. Prepare Dough: In a large mixing bowl, combine flour, sugar, and salt. Add the eggs, vanilla extract, softened butter, and the yeast mixture. Mix until a dough forms. Knead for about 5-7 minutes until smooth and elastic. You can do this by hand or using a stand mixer with a dough hook.
  3. First Rise: Place the dough in a lightly greased bowl, cover with a clean cloth, and let it rise in a warm place until it doubles in size, about 1 to 1.5 hours.
  4. Shape Donuts: Punch down the dough and roll it out on a lightly floured surface to about 1/2 inch thickness. Use a round cutter to cut out circles. Re-roll scraps as needed.
  5. Second Rise: Place the cut-out dough circles on a baking sheet lined with parchment paper. Cover and let rise again for about 30-45 minutes or until puffy.
  6. Frying: In a deep saucepan, heat oil to 350°F (175°C). Fry the doughnuts in batches, about 1-2 minutes per side, until golden brown. Remove and drain on paper towels.
  7. Fill and Dust: Using a piping bag fitted with a filling tip, insert jelly into each donut. Roll or dust the donuts with powdered sugar.
