Description
A delightful and moist pineapple upside-down cake baked in a Bundt pan, with a caramelized topping of pineapple slices and maraschino cherries.
Ingredients
Scale
- 1 box yellow cake mix
- 1 cup pineapple juice (use juice from the canned pineapples)
- 3 large eggs
- ⅓ cup vegetable oil
- 1 can (20 oz) pineapple slices
- ½ cup unsalted butter
- 1 cup brown sugar
- Maraschino cherries (optional, for garnish)
- ½ cup unsalted butter (melted, for glaze)
- 1 cup powdered sugar (for glaze)
- 1 tablespoon milk (for glaze)
- 1 teaspoon vanilla extract (for glaze)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a Bundt pan thoroughly with butter or non-stick spray.
- Create Pineapple Layer: Melt ½ cup of butter in a saucepan over medium heat. Stir in 1 cup of brown sugar until dissolved and smooth. Pour this mixture evenly into the bottom of the prepared Bundt pan. Arrange pineapple slices over the brown sugar mixture. Place a maraschino cherry in the center of each pineapple slice, if desired.
- Prepare Cake Batter: In a large bowl, combine the yellow cake mix, eggs, 1 cup pineapple juice, and ⅓ cup vegetable oil. Mix until smooth and well combined.
- Assemble Cake: Pour the cake batter carefully over the arranged pineapples in the Bundt pan.
- Bake: Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Cool and Invert: Allow the cake to cool in the pan for 10 minutes. Carefully invert the cake onto a serving plate.
- Prepare Glaze: In a bowl, whisk together melted butter, powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the warm cake.
Notes
- Ensure the Bundt pan is well-greased to prevent sticking.
- Use the juice from the canned pineapples for extra flavor in the cake.
- Let the cake cool slightly before inverting to allow it to set and avoid breaking.
- Serve warm for the best flavor experience.
- Customize by adding nuts like pecans or a sprinkle of coconut to the brown sugar layer for additional texture and flavor.
