Instructions
- Prepare the Crust: In a medium bowl, mix graham cracker crumbs, melted butter, and granulated sugar until well combined. Press the mixture firmly into the bottom of an 8×8-inch square baking pan. Refrigerate while preparing the filling.
- Make the Filling: In a large bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, beating until the mixture is creamy. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture. Stir in the lemon juice and lemon zest until fully incorporated.
- Assemble the Cheesecake Bars: Spread the lemon cream cheese mixture evenly over the prepared crust. Refrigerate for at least 4 hours or until set.
- Serve: Once set, cut into bars and garnish with whipped cream and fresh lemon slices.
