Description

Delicious and nutritious banana apple muffins made with wholesome ingredients. Perfect for breakfast or a snack!


Ingredients

Scale
  • 2 cups banana (mashed ripe, about 4 medium)
  • 3/4 cup apples (diced, about 1 small apple)
  • 1/2 cup avocado oil (or olive oil)
  • 1 cup tiger nut flour
  • 1/2 cup coconut sugar (maple sugar or evaporated cane juice)
  • 2/3 cup cassava flour
  • 2 teaspoons molasses
  • 1 teaspoon dried ginger
  • 1/4 teaspoon cardamom (use mace for AIP)
  • 2 drops cloves EO or 1/8 teaspoon cloves powder
  • 11/4 teaspoons baking soda
  • 3/4 teaspoon sea salt

Instructions

  1. Line muffin tin; set aside.
  2. Preheat oven to 325°F.
  3. Smash bananas in a large mixing bowl.
  4. Add apples, oil, sweetener of choice, and molasses.
  5. Place remaining dry ingredients on top: tiger nut flour, cassava flour, spices, baking soda, and sea salt.
  6. Stir together with a spatula well, but without over-mixing.
  7. Fill muffin tin. This recipe makes 6 jumbo muffins, or 8 to 10 smaller muffins.
  8. Bake for 20 to 25 minutes.
  9. Allow to cool on rack, then enjoy.
  10. To store, place in a sealed container on the counter for up to 2 days, or freeze for up to 3 months. To defrost, place at room temp for 2 hours, or overnight.

  • For a different flavor profile, try adding nuts or chocolate chips.
  • These muffins freeze well, making them great for meal prep.
