Ingredients

  • 2 cups basmati rice
  • 3 cups beef or chicken stock
  • 1 large red onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander powder
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon

  • 1 fresh tomato, diced (for garnish)
  • 1/2 cup plain yogurt (for serving)

Instructions

  1. Season the Beef: In a bowl, mix the beef cubes with cumin, coriander, paprika, turmeric, cinnamon, salt, and black pepper. Let it marinate for at least 30 minutes for better flavor.
  2. Sauté the Onion and Garlic: Heat olive oil in a large pan over medium-high heat. Add chopped onion and sauté until golden. Stir in minced garlic and cook for another minute.
  3. Cook the Beef: Add the marinated beef cubes to the pan. Brown the beef on all sides for about 5-7 minutes.
  4. Prepare the Rice: Rinse the basmati rice until the water runs clear. Add the rice to the pan with the beef and stir well to coat the grains with the spices.
  5. Simmer: Pour in the stock, bring to a boil, then lower the heat to simmer. Cover the pan and cook until the rice absorbs the stock and becomes tender, about 18-20 minutes.
  6. Serve and Garnish: Fluff the rice with a fork. Serve on a platter and top with diced tomatoes, chopped parsley, and a dollop of yogurt.

Notes

  • For extra flavor, consider adding a pinch of cardamom to the rice while cooking.
  • If available, use Middle Eastern spice blends such as Baharat to enhance the authenticity of the dish.
