A delicious and easy recipe for chicken puff pastry bites filled with savory chicken and mushrooms.
Ingredients

- 1 lb boneless, skinless chicken breasts
- 8 oz fresh cremini or button mushrooms, sliced
- 2 sheets high-quality frozen puff pastry, thawed
- 1 medium onion, diced
- 3 cloves garlic, minced
- ½ cup heavy cream
- 1 tsp fresh thyme, chopped
- 1 tbsp fresh parsley, chopped
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet over medium heat, add olive oil and sauté diced chicken until browned (5-7 minutes). Add onions and garlic; cook until onions are translucent.
- Stir in mushrooms and cook until they release moisture (3-4 minutes). Add heavy cream, thyme, salt, and pepper; mix well.
- Roll out puff pastry on a floured surface and cut into 4×4-inch squares.
- Spoon the chicken mixture onto the center of each square. Fold diagonally and pinch edges to seal.
- Place on a baking sheet lined with parchment paper and bake for 20-25 minutes until golden brown.
Notes
- Serve with a side salad or your favorite dipping sauce.
- These can be made ahead of time and frozen before baking.
