- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 3 large eggs (room temperature)
- 1/3 cup vegetable oil
- 2 tbsp red food coloring (gel)
- 1 tsp vanilla extract
- 8 oz full-fat cream cheese (softened)
- 1 cup powdered sugar
- 1/2 cup heavy cream (cold)
Instructions
- Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In another bowl, beat eggs and sugar until thick. Mix in oil, food coloring, and vanilla extract. Gradually add dry ingredients until combined.
- Spread batter evenly in the pan and bake for about 15 minutes or until a toothpick comes out clean.
- Immediately invert the cake onto a towel sprinkled with powdered sugar and gently peel off parchment paper. Roll tightly from one end while warm.
- For the filling, whip together cream cheese, powdered sugar, and heavy cream until fluffy. Unroll the cake, spread filling evenly, then roll back up without the towel.
- Wrap in plastic wrap and refrigerate for at least an hour before slicing.
Notes
- Make sure the eggs are at room temperature for better consistency.
- Allow the cake to cool slightly before rolling to prevent cracking.
