Description

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3 large eggs (room temperature)
  • 1/3 cup vegetable oil
  • 2 tbsp red food coloring (gel)
  • 1 tsp vanilla extract
  • 8 oz full-fat cream cheese (softened)
  • 1 cup powdered sugar
  • 1/2 cup heavy cream (cold)

Instructions

  1. Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, beat eggs and sugar until thick. Mix in oil, food coloring, and vanilla extract. Gradually add dry ingredients until combined.
  4. Spread batter evenly in the pan and bake for about 15 minutes or until a toothpick comes out clean.
  5. Immediately invert the cake onto a towel sprinkled with powdered sugar and gently peel off parchment paper. Roll tightly from one end while warm.
  6. For the filling, whip together cream cheese, powdered sugar, and heavy cream until fluffy. Unroll the cake, spread filling evenly, then roll back up without the towel.
  7. Wrap in plastic wrap and refrigerate for at least an hour before slicing.
