Description

Ingredients

  • 1 lb fresh carrots, peeled and cut into 2-inch pieces
  • 3 tbsp honey
  • 2 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp freshly cracked pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together honey, balsamic vinegar, olive oil, salt, and pepper until well combined.
  3. Add the carrot pieces to the bowl and toss until they are evenly coated with the glaze.
  4. Spread the carrots on a parchment-lined baking sheet in a single layer.
  5. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until tender and caramelized.
