- 1 lb fresh carrots, peeled and cut into 2-inch pieces
- 3 tbsp honey
- 2 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- 1/2 tsp salt
- 1/4 tsp freshly cracked pepper
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, whisk together honey, balsamic vinegar, olive oil, salt, and pepper until well combined.
- Add the carrot pieces to the bowl and toss until they are evenly coated with the glaze.
- Spread the carrots on a parchment-lined baking sheet in a single layer.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until tender and caramelized.
- Serve warm, drizzled with any remaining glaze from the baking sheet.
