Description

Delicious ginger molasses cookies that are soft in the center with a chewy edge.


Ingredients

  • 1 tsp baking soda
  • 1/2 cup unsulfured molasses
  • 1/2 cup brown sugar (packed)
  • 1 tsp ground cinnamon
  • 1 large egg (room temperature)
  • 1/2 cup unsalted butter (softened)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, baking soda, ground ginger, cinnamon, and a pinch of salt.
  3. In another bowl, cream the softened butter and brown sugar until fluffy. Mix in molasses and then add the egg, combining well.
  4. Gradually add the dry ingredients to the wet mixture until just combined; avoid overmixing.
  5. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them two inches apart.
  6. Bake for about 10-12 minutes until edges are set but centers look slightly underbaked. Cool on wire racks before serving.
