Ingredients

- 2 cups all-purpose flour
- 2 tsp ground ginger
- 1 tsp baking soda
- 1/2 cup unsulfured molasses
- 1/2 cup brown sugar (packed)
- 1 tsp ground cinnamon
- 1 large egg (room temperature)
- 1/2 cup unsalted butter (softened)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together flour, baking soda, ground ginger, cinnamon, and a pinch of salt.
- In another bowl, cream the softened butter and brown sugar until fluffy. Mix in molasses and then add the egg, combining well.
- Gradually add the dry ingredients to the wet mixture until just combined; avoid overmixing.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them two inches apart.
- Bake for about 10-12 minutes until edges are set but centers look slightly underbaked. Cool on wire racks before serving.
