- 4 cups mixed seasonal vegetables (carrots, broccoli, cauliflower)
- 1 cup heavy cream
- 2 cloves garlic (minced)
- 1 cup grated sharp cheddar cheese
- 1 cup low-sodium vegetable broth
- 1 tbsp olive oil

- 1 tsp dried thyme
Instructions
- Preheat oven to 375°F (190°C) and grease a large baking dish.
- Toss mixed vegetables in olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes until caramelized.
- In a saucepan over medium heat, sauté minced garlic until fragrant. Whisk in heavy cream and vegetable broth, simmering until slightly thickened.
- Remove from heat and stir in cheddar cheese and thyme until melted.
- Layer roasted vegetables in the baking dish, pour the creamy mixture over them, and bake for 25-30 minutes until bubbly and golden brown.
