Description

A delicious creamy roasted vegetable bake that combines seasonal vegetables with a rich cheddar cheese sauce.


Ingredients

  • 4 cups mixed seasonal vegetables (carrots, broccoli, cauliflower)
  • 1 cup heavy cream
  • 2 cloves garlic (minced)
  • 1 cup grated sharp cheddar cheese
  • 1 cup low-sodium vegetable broth
  • 1 tbsp olive oil

  • 1 tsp dried thyme

Instructions

  1. Preheat oven to 375°F (190°C) and grease a large baking dish.
  2. Toss mixed vegetables in olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes until caramelized.
  3. In a saucepan over medium heat, sauté minced garlic until fragrant. Whisk in heavy cream and vegetable broth, simmering until slightly thickened.
  4. Remove from heat and stir in cheddar cheese and thyme until melted.
  5. Layer roasted vegetables in the baking dish, pour the creamy mixture over them, and bake for 25-30 minutes until bubbly and golden brown.
