A delightful treat for the holidays, these Festive Santa Belt Macarons are both fun to make and delicious to eat!
Ingredients

- 1 cup almond flour
- 1 3/4 cups powdered sugar
- 3 large egg whites
- 1/4 cup granulated sugar
- Red gel food coloring
- 1/2 cup unsalted butter, softened
- 1 1/2 cups confectioners’ sugar
- 1 teaspoon vanilla extract
- Black fondant
- Yellow fondant
Instructions
- Prepare the Macaron Shells
- Preheat the oven to 300°F (150°C). Line baking sheets with parchment paper.
- Sift the almond flour and powdered sugar together in a bowl. Discard any large pieces.
- In a separate bowl, whip the egg whites until they form soft peaks. Gradually add granulated sugar and continue to whip until stiff peaks form.
- Add red food coloring to the meringue until you achieve the desired color.
- Gently fold the almond flour mixture into the meringue until the batter flows like molten lava when dripped from the spatula.
- Transfer the batter into a piping bag fitted with a round tip and pipe small circles onto the prepared baking sheets.
- Tap the baking sheets on the counter to release any air bubbles, then let the macarons sit for 30-60 minutes until a skin forms on the surface.
- Bake the Macaron Shells
- Bake the macarons one sheet at a time for 12-15 minutes. Let them cool completely before removing from the baking sheet.
- Prepare the Filling
- Beat the unsalted butter until creamy. Gradually add confectioners’ sugar, then vanilla extract. Beat until smooth.
- Pipe the buttercream onto half of the macaron shells and sandwich them with the remaining shells.
- Decorate
- Roll out black fondant and cut into strips to form Santa’s belt. Roll out yellow fondant and cut into small squares to form belt buckles.
- Use water to attach the fondant decorations to the macarons.
