Description

A delicious recipe for sweet and sour meatballs that the whole family will love.


Ingredients

  • 26 ounces frozen homestyle beef meatballs
  • ½ cup packed light brown sugar
  • ½ cup apple cider vinegar
  • ⅓ cup ketchup
  • 1 tablespoon non-alcoholic Worcestershire sauce
  • 1 tablespoon low sodium soy sauce
  • 2 teaspoons minced garlic
  • 2 tablespoons butter
  • 1 medium red bell pepper, cut into 1” pieces
  • 1 medium green bell pepper, cut into 1” pieces
  • 1 cup yellow onion, cut into 1” pieces
  • 2 tablespoons cornstarch
  • 1 cup pineapple chunks in 100% juice (reserve ⅓ cup pineapple juice in a small bowl)
  • Cooked white rice, brown rice, or noodles, for serving
  • Toasted sesame seeds, for garnish
  • Sliced green onions (scallions), for garnish

Instructions

  1. In a large skillet, melt the butter over medium heat.
  2. Add the red and green bell peppers and yellow onion. Sauté until they are soft.
  3. In a bowl, combine brown sugar, apple cider vinegar, ketchup, Worcestershire sauce, soy sauce, minced garlic, and pineapple juice. Mix well.
  4. Add the frozen meatballs to the skillet and pour the sauce over them. Stir to coat.
  5. Cover and cook for about 15-20 minutes, stirring occasionally, until the meatballs are heated through.
  6. In a small bowl, mix cornstarch with equal parts of water to make a slurry. Add it to the skillet to thicken the sauce.
  7. Serve over cooked rice or noodles and garnish with sesame seeds and sliced green onions.

Notes

  • For a spicier version, add sliced jalapeños.
  • This dish can be made in a slow cooker for convenience.
