Description
This delicious kale salad is packed with flavor and nutrients, featuring a zesty lemon dressing.
Ingredients
Scale
- 2 bunches dark leafy kale or curly kale (thinly sliced)
- 1 teaspoon olive oil
- kosher salt
- black pepper
- 1/2 cup pistachios or pumpkin seeds
- 1/2 cup golden raisins or dried cranberries
- 1/2 cup shredded parmesan cheese
- 1 tablespoon lemon zest (about 1 lemon)
- 2 tablespoons fresh lemon juice (about the juice of 2 lemons)
- 1/4 cup apple cider vinegar
- 1/4 cup olive oil
- 1–2 tablespoons maple syrup or honey (to taste)
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
- Add the sliced kale to a medium-sized mixing bowl or salad bowl, drizzle on a little olive oil, sprinkle salt and pepper, and lightly massage it for 1 minute to help break it down a little.
- Add the chopped pistachios or pumpkin seeds, golden raisins, grated parmesan cheese, and the lemon zest to the kale and lightly toss everything together.
- Add the lemon juice, apple cider vinegar, olive oil, maple syrup or honey, kosher salt, and black pepper to a mason jar with a lid and shake it well. You can also add all dressing ingredients to a small bowl and whisk until it emulsifies.
- Pour the dressing on the kale salad and toss well.
- Serve cold or at room temperature and ENJOY!
Notes
- Massage the kale well to make it tender.
- This salad can be stored in the refrigerator for a couple of days.
