Ingredients
Scale
- 1 ¾ cups all-purpose flour
- ¾ cup cocoa powder
- 2 cups granulated sugar
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 ½ cups fresh strawberries, hulled and halved
- ¼ cup granulated sugar
- 1 tablespoon lemon juice
- 1 cup heavy cream
- 8 oz dark chocolate, chopped
- 2 cups milk
- 1 package instant vanilla pudding mix
- Fresh strawberries, whole
- Chocolate truffles
- Chocolate shavings
Instructions
- Bake the Chocolate Cake:
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans. In a large bowl, sift together flour, cocoa powder, sugar, baking powder, baking soda, and salt. Add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes. Stir in boiling water (batter will be thin). Pour into prepared pans. Bake for 30-35 minutes or until a toothpick comes out clean. Cool for 10 minutes, then remove from pans to cool completely. - Prepare Strawberry Filling:
In a saucepan over medium heat, combine strawberries, sugar, and lemon juice. Cook until strawberries soften, about 5-7 minutes. Let cool. - Make the Ganache:
Heat the cream in a saucepan until just boiling. Remove from heat and add chopped chocolate. Let sit for 5 minutes, then stir until smooth. Allow to thicken slightly at room temperature. - Prepare the Custard Layer:
Prepare the instant pudding with milk according to package instructions. Chill until set. - Assemble the Cake:
Place one cake layer on a serving plate. Spread a layer of custard over the cake. Evenly distribute strawberry filling over custard. Place another cake layer on top. Cover the entire cake with ganache, smoothing with a spatula. - Decorate:
Arrange whole strawberries and chocolate truffles on top. Sprinkle chocolate shavings around the edges.
Notes
- Ensure cakes are completely cooled before assembling to prevent melting the custard and ganache.
- For a richer flavor, use high-quality cocoa powder and chocolate.
- Allow the ganache to cool slightly before pouring over the cake to achieve the right consistency.
