- 1 lb shrimp, peeled and deveined
- 1 package egg roll wrappers
- 1 cup green cabbage, shredded
- 1 cup purple cabbage, shredded
- 1/2 cup carrots, julienned
- 3 green onions, sliced
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp ginger, grated

Instructions
- Prepare the Shrimp Filling: In a medium bowl, mix the shrimp with garlic, soy sauce, oyster sauce, ginger, salt, and pepper. Let this marinate for about 15 minutes.
- Prepare the Vegetables: In another bowl, combine the green cabbage, purple cabbage, carrots, and half of the green onions.
- Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface. Place a spoonful of shrimp mixture and a spoonful of vegetable mix in the center. Fold the bottom corner over the filling, fold the sides in, and roll upwards tightly. Seal the top corner with a dab of water. Repeat with the remaining ingredients.
- Cook the Egg Rolls: In a deep skillet or fryer, heat oil to 350°F (175°C). Carefully place a few egg rolls in the oil, turning occasionally, until they are golden brown and crispy. This should take about 4-5 minutes. Remove from oil and place on a paper towel-lined plate to drain excess oil.
- Serve: Garnish with the remaining green onions and serve immediately with your choice of dipping sauce, like sweet chili or soy sauce.
