- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- Vegetable oil for frying
- Fresh parsley, chopped, for garnish (optional)
- Drizzle of creamy sauce (e.g., garlic aioli or ranch, optional)
Instructions
- Prepare the Potato Mixture: In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, minced garlic, salt, and pepper. Mix well until all ingredients are fully incorporated.
- Shape the Balls: Take a small portion of the potato mixture and roll it into a ball approximately 1.5 inches in diameter. Repeat with the remaining mixture.
- Set Up Breading Station: Place flour in a shallow dish. Place beaten eggs in another shallow dish. Place breadcrumbs in a third shallow dish.
- Bread the Potato Balls: Roll each potato ball in flour, shaking off excess. Dip in beaten eggs, ensuring it’s fully coated. Roll in breadcrumbs, pressing gently to adhere. Repeat with all balls.
- Fry the Potato Balls: Heat vegetable oil in a deep fryer or large, deep skillet to 350°F (175°C). Fry the potato balls in batches until golden brown and crispy, about 3-4 minutes per batch. Use a slotted spoon to transfer to a paper towel-lined plate to drain excess oil.
- Serve: Arrange on a serving platter. Drizzle with creamy sauce if desired. Garnish with chopped parsley.

- For extra flavor, add chopped chives or bacon bits to the potato mixture.
- Ensure the oil is hot enough before frying; otherwise, the balls may become greasy.
