- 4 slices hearty bread (such as sourdough or country loaf)
- 8 slices crispy bacon
- 4 slices sharp cheddar cheese
- 4 slices mozzarella cheese
- 2 tablespoons unsalted butter, softened
- 1 tablespoon mayonnaise
- 1 teaspoon Dijon mustard (optional)
- Fresh thyme sprigs for garnish
Instructions
- Preparation: Cook the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate to drain excess fat.
- Assemble the Sandwich: Spread a thin layer of mayonnaise on one side of each bread slice. This will help achieve a golden crust. On the inside of two bread slices, spread a thin layer of Dijon mustard if desired. Layer two slices of cheddar cheese, followed by four slices of bacon, then two slices of mozzarella cheese. Top with the remaining bread slices, mayonnaise-side out.
- Cooking: Heat a large skillet or griddle over medium-low heat. Add 1 tablespoon of butter and let it melt, spreading it evenly across the skillet. Place the sandwiches in the skillet. Cook for 3-4 minutes on each side or until the bread is golden brown and the cheese is melted. Press gently with a spatula for even cooking. Add more butter if necessary before flipping to cook the other side.
- Serving: Remove the sandwiches from the skillet and let them rest for a minute. Cut each sandwich in half and garnish with fresh thyme sprigs. Serve immediately.
